On my first visit I like to order the paella (with lobster or seafood), because the portions are large enough to share and the rice often has that slight browning on the bottom that I personally love. At midday the restaurant offers a menu at a reasonable price, often consisting of three courses: starter, main (fish or meat) and dessert. Wine list? Good enough to find something local without breaking the bank. Practical: the kitchen is open enough to watch the chefs prepare the catch of the day, and the waitstaff are happy to recommend the day's specialty.
